Baked Risotto
is taking quite a while. Anxious to enjoy the flavors of goat cheese, asparagus, and lemon. Good thing I’m getting to-do list things out of the way to pass the time!
Green Lunch
2 slices of whole wheat bread sunflower sprouts 1/4 avocado handful of kale; wilted balsamic onions (I’ve got nearly 5 pounds of onions….if anyone has any recipes- share please) light spread of fresh goat cheese chopped hard boiled egg
We made a similar sandwich over the weekend and it was so good I had to do it again. Looking forward to having this for lunch with a side of orange...

Morning Shake
1 banana 1/4 c. rolled oats 1 tbs cocoa powder 1 scoop protein powder 1/2 c. water or your milk of preference blend. enjoy.
I had mine with a peanut butter banana oat square on the side. Now I’m ready for a run before the rain hits.
Monday Breakfast
Ezekiel Wrap, Peanut Butter, Banana, Dried Cranberries, & Honey. Fold it. Munch it with a hot cup of (Silverbridge!) coffee.

Quick Dinner
quinoa
chopped carrot
chopped leek
chopped portobello mushroom cap
chard
dill pesto
balsamic vinegar
Cook quinoa. Saute vegetables and reduce with balsamic vinegar. Add vegetable mixture to prepared quinoa. Add dill pesto. Mix well. Pile on top of fresh chopped chard. Devour. YUM

Spring Break Day #1
Spent some time at the gym to swim, bike and lift. Nice to not have a time limit. Did a load of laundry. Had lunch. Read. Sketched. Went for a nice 4.5 mile run to and around Humboldt park. Now its time to read more and continue to enjoy my much needed break.

Spring Frittata
6 eggs
1/4 c milk
1/4 c feta
3 stalks asparagus; chopped
1/4 c onion; diced
1/4 c fresh dill; chopped
sliced smoked salmon; 1 serving
preheat oven to 350 and grease a pie pan
beat eggs, milk, and dill together
pour egg mixture into the pie dish then sprinkle feta, asparagus, onion, and salmon evenly through out.
cook for 15 to 20 minutes or until middle is solid
This treadmill routine
is awesome. I only got through the sequence once because after running half way to the gym (my bus was being the slowest today) I was pressed for time before yoga. BUT it was a lot of fun and I can’t wait to do it again.

One of
my favorite parts about the grocery store I go to is their “free” section. They basket up produce that is on its last leg and let people take what they will. Today, I took a bag of organic kiwi and a couple bananas.
I’m in the process of making kiwi sorbet and I’m going to freeze the bananas for smoothies.
