are my favorite time of the day. Whether I’m dragging my butt to the gym before the sun or spending the morning preparing lunch and drinking a carafe of coffee its a special time that I’ve got all to myself.
This morning is one of those mornings I don’t go to the gym. I still get up at the same time and eat a mindful breakfast, but I have a full 3 hours before I have to get my bags together for work.
Today I had time to make an awesome tofu sandwich with port reduced mushrooms, arugula, and baby spinach for lunch. I also made a waldorf salad for my after school/pre run/yoga snack. I’ve been roasting beets for my birthday cake, listening to lovely music, and sipping bottomless cups of coffee.
I’m very thankful to myself for making at least a little time to do what I love everyday.
